Cold Shirataki Noodles and Fruit Salad

Ingredients
  • 1 pound Shirataki Noodles
  • 8 ounce plain lowfat yogurt
  • 1/4 cup frozen orange juice-concentrate, thawed
  • 15 ounce canned mandarin oranges, drained
  • 1 cup red seedless grapes
  • 1 cup seedless white grapes
  • 1 cored, diced red apple
  • 1/2 cup celery, sliced
  • 1/2 cup walnut halves-
  • lettuce
  • strawberry
Instructions
  1. Drain and rinse Shirataki Noodles.
  2. Chill in cold water and drain well. Using kitchen shears, cut the Shirataki into bite size pieces.
  3. Blend orange juice concentrate and yogurt well.
  4. Toss mixture with remaining ingredients and Shirataki Noodles.
  5. Cover and chill thoroughly.
  6. Serve on a bed of lettuce.
  7. Garnish with fresh strawberries.
