Ingredients
  • ¼ cup soy sauce
  • ¼ cup rice wine vinegar
  • 1 tablespoon sesame oil
  • 2 teaspoons olive oil
  • ½ teaspoon red pepper sauce
  • 2 cups julienned cooked chicken
  • Or your veggie substitute, or mixed)
  • 3 carrots, shredded
  • 1½ sliced green onions
  • 2-8 ounce packages Shirataki Noodles
  • ½ cup chicken broth, heated
Instructions
  1. Combine the soy sauce, vinegar, sesame oil, olive oil, and red pepper sauce in a serving bowl.
  2. Add the chicken, carrots and green onions.
  3. Drain the Shirataki Noodles. Rinse under hot water . Rinse well. Place on paper towels to dry.
  4. Stir in ½ cup chicken broth.
  5. Toss sauce with the hot pasta.

Ingredients
  • 1 pound chicken drumsticks chopped into 1 inch pieces; use cleaver or heavy knife
  • 1 pound tofu, pressed and drained, cut into 1 inch pieces
  • 1 bundle watercress
  • 1 Chinese cabbage, cut into 2 inch pieces
  • 2 cups shirataki noodles
  • 2 cups spring onions, cut into 2 inch pieces
  • 1 cup carrots, thinly sliced diagonally
  • 8 dried shiitake mushrooms, soaked in water; keep this water
  • 1 2 inch x 6 inch kombu seaweed, or 2 teaspoons dashi powder
  • 1 cup soy sauce
  • ½ cup rice vinegar
  • 1 lemon
Instructions
  1. Add 1 inch of water to a 12 inch table top skillet.
  2. Drain and rinse Shirataki Noodles very well. Place on paper towels to dry and set aside.
  3. Add the kombu and boil. Just before it starts to actually boil, remove the kombu.
  4. If you are using dashi powder, add it now.
  5. If you soaked the shiitake mushrooms, dump that water in here, too.
  6. Put whatever you want to eat in the water to cook it until ready.
  7. Serve with dipping sauce and serve over a bed of Shirataki Noodles
  8. If you have the luxury of obtaining shichimi togarashi, sprinkle in a bit for added flavor.

Shirataki Noodle Salad w/ Creamy Italian Dressing

Shirataki Noodle Salad with Creamy Italian Dressing

Ingredients
  • 8 ounces creamy Italian dressing
  • 1 tablespoon lemon juice
  • 4 tablespoons water
  • ½ teaspoon oregano flakes
  • ½ teaspoon basil flakes
  • 1 pound Shirataki Noodles
  • 2 cups chopped fresh vegetables*
  • 1 cup tuna, chicken or seafood cooked or canned
  • Lettuce for salad plates
Instructions
  1. Drain and rinse Shirataki Noodles very well. Place on paper towels to dry and set aside.
  2. *Vegetables can include all or some of the following: broccoli or cauliflower florets, fresh tomatoes, carrots, sweet pepper, green onion, zucchini or summer squash.
  3. To make the dressing, put all ingredients in a large decanter, mixing well. Refrigerate.
  4. Toss Shirataki Noodles with vegetables and tuna, chicken or seafood.
  5. Add a little more dressing.
  6. Serve on lettuce-lined plates.
