Smoked Salmon Macaroni Shirataki Salad

Ingredients
  • 1 package Macaroni Shirataki
  • Olive oil
  • 1 to 2 tablespoons mayonnaise
  • 4 ounce smoked salmon, shredded
  • ½ cup finely chopped orange or yellow bell pepper
  • ½ cup finely chopped celery
  • ¼ cup chopped green onions
  • 1 teaspoon salt
  • Freshly ground pepper
  • Pinch of dried dill
  • 1 tablespoon lemon juice
Instructions
  1. Drain and rinse Macaroni Shirataki very well. Place on paper towels to dry.
  2. Stir together all of the ingredients, adjusting the amounts of mayonnaise, lemon juice, salt, and pepper to taste.
  3. Serve chilled or at room temperature.
Notes
I usually double this recipe, but it is easily halved also.

Ingredients
  • ¼ cup grapeseed oil or corn oil
  • 3 tablespoon dark sesame oil
  • ½ teaspoon crushed dried red pepper or chili powder
  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 package Angel Hair Shirataki
  • Salt
  • ½ cup coarsely chopped cilantro
  • ¼ cup chopped roasted peanuts
  • ¼ cup thinly sliced green onions
  • ¼ cup sliced and chopped red bell pepper
  • 1 tablespoon toasted sesame seeds
Instructions
  1. Drain and rinse Angel Hair Shirataki very well. Place on paper towels to dry.
  2. In a microwave-safe dish, heat the vegetable oil, sesame oil, and red pepper, microwave on high heat for 2 minutes. Add the honey and soy sauce, and mix well.
  3. Combine the Angel Hair Shirataki with the dressing in a large bowl until the pasta is well coated. Cover and chill for several hours.
  4. When ready to serve, mix in the cilantro, peanuts, green onions and bell pepper. Garnish with toasted sesame seeds.

Honey-Jalapeno Chicken with Sesame and Shirataki Noodles

Honey-Jalapeno Chicken with Sesame and Shirataki Noodles

Ingredients
  • 1 package Shirataki Noodles
  • 1 jalapeno, seeds removed
  • ⅓ cup honey
  • ¼ cup chopped fresh cilantro leaves
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 to 3 tablespoons water
  • 2 teaspoons olive oil
  • ½ rotisserie chicken, shredded or sliced
  • 3 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • ¼ cup chopped green onions, green part only
  • 2 tablespoons pickled ginger, minced
Instructions
  1. Drain and rinse Shirataki Noodles very well. Place on paper towels to dry.
  2. In a blender or food processor, combine jalapenos, honey, cilantro, and ½ teaspoon each salt and black pepper and puree until smooth.
  3. Add 2 to 3 tablespoons of water to the mixture until desired consistency is achieved.
  4. Pour the 2 teaspoons of olive oil into a preheated skillet. Add the shredded chicken and the blended sauce and cook until heated through.
  5. In a medium bowl, combine Shirataki Noodles, soy sauce, sesame oil, scallions, and pickled ginger. Toss and then transfer to serving bowl.
  6. Pour heated chicken and sauce over Shirataki Noodles.
Notes
The sauce should be about the consistency of a meat sauce. That's how we like it. You may like it a little thinner.
