Recipe: Ham and Zucchini With Shirataki Noodles

Ingredients

  • 8 ounces Shirataki Noodles
  • 2 teaspoons butter
  • 1 medium white onion thinly sliced
  • 3 cups cooked ham
  • 4 small zucchini cut julienne
  • 1 medium bell pepper cut into small strips
  • 1/8 teaspoon freshly ground black pepper
  • 1/4 cup sour cream
  • 1/4 cup plain yogurt
  • 1 teaspoon poppy seeds

Instructions

  1. Drain and rinse Shirataki Noodles under warm water.
  2. Heat butter in skillet then cook onion in butter stirring until tender.
  3. Stir in ham, zucchini, bell pepper and pepper.
  4. Cover and cook over medium for 8 minutes stirring occasionally until crisp tender.
  5. Stir in sour cream, yogurt and poppy seeds.
  6. Heat through and serve on a bed of Shirataki Noodles.

Salmon Stir-Fry Shirataki Noodle

Recipe: Salmon Stir-Fry Shirataki Noodle

Ingredients

  • 1/2 pound salmon (you can use water-packed canned, drained)
  • 1/4 teaspoon sesame oil
  • 1 clove garlic
  • 2 1/2 teaspoons soy sauce
  • 1 tablespoon vinegar
  • 1 tablespoon cooking wine (I use rice)
  • 1 -8 ounce package Shirataki Noodles
  • salt & fresh ground pepper, to taste
  • 1 pinch cornstarch (or flour)
  • Some ideas for vegetables to add
  • wakame seaweed, to taste
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 shiitake mushroom
  • 3 okra pods, to taste
  • 3 to 4 carrots
  • cabbage, to taste

Instructions

  1. Drain and rinse Shirataki Noodles under warm water for at least 2 minutes.
  2. Chop the clove of garlic.
  3. Marinate the first six ingredients together for a few hours or overnight.
  4. If using shiitake mushroom, soak it in warm water overnight best or for about twenty minutes.
  5. Cut all the vegetables into fine strips.
  6. Heat oil in skillet.
  7. Stir fry the salmon first for about two minutes (or until it changes color if it is raw).
  8. Add some salt and pepper.
  9. Then add the vegetables and cook for two minutes.
  10. Add the cornstarch to the marinade and stir to dissolve.
  11. Stir in the Shirataki Noodles and the marinade and bring to boil.
  12. Add more salt and pepper to taste.

Southwest Shirataki Noodle Pie

Recipe: Southwest Shirataki Noodle Pie

Ingredients

  • 1 – 8 ounce package Shirataki egg noodles, drained and rinsed
  • 1/2 cup milk
  • 1 egg
  • 1 pound lean ground beef
  • 1 onion, chopped
  • 1/2 green pepper, chopped
  • 1/2 red pepper or yellow pepper, chopped
  • 2 teaspoons chopped garlic
  • 2 teaspoons chili powder
  • 1/2 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon fresh ground pepper
  • 2 1/2 cups tomato sauce
  • 1 cup shredded monterey jack pepper cheese
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Combine noodles, milk and egg in bowl; mix well.
  2. Add noodle mixture to a 13×9 baking pan that has been sprayed with cooking spray such as Pam.
  3. Brown ground beef with onion, peppers and garlic ; drain.
  4. Add seasonings.
  5. Stir in tomato sauce and cook till heated.
  6. Spread over the noodles and top with the cheeses.
  7. Bake at 425 for 10-15 minutes until bubbly and cheese melts.
  8. Let stand for a few minutes before serving.
