Spaghetti Shirataki Noodle Salad

Ingredients
  • ¾ cup rice vinegar
  • ¼ cup sugar
  • ¾ teaspoon salt
  • 3 large garlic cloves, minced
  • 1 jalapeño chile pepper, seeded and minced
  • 3 tablespoons fresh lime juice
  • Zest of one lime
  • 1 tablespoon sesame oil
  • 1 package Spaghetti Shirataki Noodles
  • 1 large red bell pepper, chopped
  • 1 large ripe mango, peeled and chopped into cubes
  • 1 cup chopped fresh basil
  • 1 cup chopped fresh mint
  • 1 cup chopped roasted, salted peanuts
  • Lime wedges for serving (optional)
Instructions
  1. Place the rice vinegar, sugar, and salt in a saucepan over medium heat for 1-2 minutes until the sugar and salt dissolve.
  2. Stir in the garlic and jalapeño, and allow to cool.
  3. Add the lime juice, lime zest, and sesame oil and mix well.
  4. Drain and rinse Shirataki Noodles very well. Place on paper towels to dry.
  5. Transfer the noodles to a large bowl and toss with the dressing.
  6. Add the mango, bell pepper, basil and mint. Toss and plate.
  7. Serve with chopped peanuts sprinkled over the top and lime wedges.
Notes
This dish may be made a few hours in advance, or even the night before and let the Shirataki chill and marinate, just be sure not to add the peanuts, mint and basil until just before serving

Honey-Jalapeno Chicken with Sesame and Shirataki Noodles

Ingredients
  • 1 package Shirataki Noodles
  • 1 jalapeno, seeds removed
  • ⅓ cup honey
  • ¼ cup chopped fresh cilantro leaves
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 to 3 tablespoons water
  • 2 teaspoons olive oil
  • ½ rotisserie chicken, shredded or sliced
  • 3 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • ¼ cup chopped green onions, green part only
  • 2 tablespoons pickled ginger, minced
Instructions
  1. Drain and rinse Shirataki Noodles very well. Place on paper towels to dry.
  2. In a blender or food processor, combine jalapenos, honey, cilantro, and ½ teaspoon each salt and black pepper and puree until smooth.
  3. Add 2 to 3 tablespoons of water to the mixture until desired consistency is achieved.
  4. Pour the 2 teaspoons of olive oil into a preheated skillet. Add the shredded chicken and the blended sauce and cook until heated through.
  5. In a medium bowl, combine Shirataki Noodles, soy sauce, sesame oil, scallions, and pickled ginger. Toss and then transfer to serving bowl.
  6. Pour heated chicken and sauce over Shirataki Noodles.
Notes
The sauce should be about the consistency of a meat sauce. That's how we like it. You may like it a little thinner.

 

Stewed Okra andTomatoes and Angel Hair Shirataki

Ingredients
  • 4 ounces breakfast sausage, preferably spicy, casings removed if necessary
  • 1 medium onion, chopped
  • 1 pound okra (about 5 cups), sliced
  • 3 cups chopped tomatoes (3-4 medium)
  • ⅔ cup low sodium tomato juice or water
  • ¼ teaspoon salt
  • ½ teaspoon crushed red pepper or ½ minced jalapeno
  • 1 package of Angel Hair Shirataki
Instructions
  1. Cook sausage in a large saucepan or Dutch oven over medium heat, breaking it up as it cooks, until it is no longer pink, 2 to 3 minutes.
  2. Add onion and cook, stirring frequently, until soft and translucent, about 5 minutes.
  3. Increase heat to high; add okra, tomatoes, tomato juice (or water), salt and crushed red pepper (or jalapeno) and cook, stirring often, until bubbling.
  4. Reduce heat to a gentle simmer and cook, stirring occasionally, until the mixture is thick and the vegetables are very tender, 35 to 45 minutes.
  5. Drain and rinse the Shiratki Noodles really well. Pat the noodles dry on paper towels. Using kitchen shears, cut the Shirataki into bite size pieces.
  6. Right before serving , add the Shiratki Noodles. Stir to coat them.
  7. Serve.
