Ingredients
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 pound ground beef, browned and drained
  • 2 (16 ounce) cans stewed tomatoes
  • 1 package Macaroni Shirataki
  • salt, to taste
  • pepper, to taste
  • parmesaen cheese (optional)
Instructions
  1. Drain the Shirataki Noodles. Rinse under warm water . Rinse well. Place on paper towels to dry.
  2. Saute onions and garlic in olive oil until translucent.
  3. Brown ground beef and drain.
  4. Add ground beef, tomatoes, salt and pepper to the onion and garlic mixture.
  5. Cook for 15 to 20 minutes or until flavors marry.
  6. Add Macaroni Shirataki just a few minutes before ready to serve.
  7. If desired, top with Parmesan cheese.
  8. Serve with crusty bread and a salad.
Notes
This is a meal we had when I was young, when Mom had very little in the fridge. Like the day before payday.I just added the Shirataki.

Brussels Sprouts with Black Bean Garlic Sauce on Shirataki Noodles

Ingredients
  • 2 tablespoons of olive oil
  • dash of chili pepper flakes
  • 25 brussels sprouts
  • 1½ tablespoons of black bean garlic sauce*
  • ground black pepper
  • 1 package Shirataki Noodles
Instructions
  1. Drain and rinse the Shirataki Noodles really well. Place on paper towels to dry.
  2. Wash the brussels sprouts well. Trim the stems and discard any of the loose leaves. Quarter them lengthwise.
  3. Place the oil and chili flakes into a large skillet and place over medium-high heat. Add the brussels sprouts to the pan and cook for about 3-5 minutes or until the sprouts begin to brown a bit. They may absorb all the oil, if they do just add another ½ tablespoon of oil.
  4. Add the black bean garlic sauce and stir until all the brussels sprouts are well coated. Add a pinch of ground black pepper (the sauce is already salty so you probably won't need any salt). Cook for about 30 more seconds.
  5. Take off heat and serve immediately on a bed of Shirataki Noodles.
Notes
* I use Lee Kum Kee black bean and garlic sauce. You may use any one that you like. Can be found in most larger grocery stores. Note that the sauce is pretty salty, so no additional salt is needed.

Smoked Salmon Macaroni Shirataki Salad

Ingredients
  • 1 package Macaroni Shirataki
  • Olive oil
  • 1 to 2 tablespoons mayonnaise
  • 4 ounce smoked salmon, shredded
  • ½ cup finely chopped orange or yellow bell pepper
  • ½ cup finely chopped celery
  • ¼ cup chopped green onions
  • 1 teaspoon salt
  • Freshly ground pepper
  • Pinch of dried dill
  • 1 tablespoon lemon juice
Instructions
  1. Drain and rinse Macaroni Shirataki very well. Place on paper towels to dry.
  2. Stir together all of the ingredients, adjusting the amounts of mayonnaise, lemon juice, salt, and pepper to taste.
  3. Serve chilled or at room temperature.
Notes
I usually double this recipe, but it is easily halved also.
