Ingredients
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
  • ½ teaspoon freshly ground pepper
  • ½ pound boneless pork loin, cut into 2x1/2-inch strips
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • ½ cup orange juice
  • 2 tablespoons cider vinegar
  • ½ tablespoon brown sugar
  • 2 medium carrots, sliced
  • 1 tablespoon corn starch
  • ½ cup sliced green onions
  • 1 package Fettuccine Shirataki
Instructions
  1. Drain and rinse Shirataki Noodles very well. Place on paper towels to dry.
  2. In a small bowl combine cumin, salt and pepper. Add pork; toss to coat.
  3. In a large skillet heat oil over medium high heat. Add the pork and garlic. Sauté for 2 minutes or until browned.
  4. In a small bowl blend the broth, orange juice, vinegar, and brown sugar. Reserve ¼ cup of the broth mixture. Pour all but the reserved broth mixture into the skillet with the pork and garlic.
  5. Add the carrots. Bring to a boil and reduce the heat to medium. Cook 7-8 minutes.
  6. Blend corn starch into reserved broth mixture. Stirring constantly, pour the corn starch mixture into the skillet to thicken the sauce. Add the green onions. Bring to a boil and simmer for 1 more minute.
  7. Toss with the Fettuccine Shirataki. Serve immediately.

Ingredients
  • ¼ cup orange juice
  • 3 tablespoons soy sauce
  • 1½ tablespoons sugar
  • 1¼ pounds pork tenderloin, cut into ¼-inch pieces
  • 2 tablespoons cornstarch
  • ½ teaspoon salt
  • 3 tablespoons vegetable oil
  • 3 cloves garlic, pressed through a garlic press
  • 2 teaspoons minced ginger
  • 1 pound sugar snap peas, trimmed and strings removed
  • 4 scallions, including green tops, cut into one-inch pieces
  • 1 package Angel Hair Shirataki Noodles
Instructions
  1. Drain and rinse Angel Hair Shirataki Noodles. Place on paper towels to dry.
  2. In a small bowl, combine the orange juice, soy sauce and sugar and set aside.
  3. Toss the pork with the cornstarch and salt. In a wok or large sauté pan, heat 2 tablespoons of the oil until hot but not smoking. Add the pork and cook, undisturbed, for about 2 minutes. Stir and continue cooking until the meat is almost cooked through, about one minute longer. Remove.
  4. Add the remaining 1 tablespoon oil to the pan. Add the garlic and ginger and cook, stirring, until fragrant, about 30 seconds. Add the snap peas and scallions and cook, stirring, until the snap peas are just cooked, about 3 minutes.
  5. Stir in the pork with any juices that may have accumulated.
  6. Add the orange juice mixture and continue cooking just until the pork is done and the sauce has thickened slightly, 1-2 minutes longer.
  7. Place the Angel Hair Shirataki Noodles on serving platter. Pour pork mixture over the pasta.

 

Pineapple and Orange Shirataki Noodle Salad

Pineapple and Orange Shirataki Noodle Salad

Ingredients
  • 2 -1 pound packages Shiritaki Noodles
  • 1 ounce peas and carrots, frozen
  • 20 ounces pineapple chunks in juice -- drained, reserve juice
  • 2 cups black beans, cooked -- rinsed and drained
  • 1 cup red bell pepper -- sliced thin.then 3rd
  • ½ cup green onions -- thinly sliced
  • 2 oranges, large -- peeled & sectioned -- cut into 3 pieces
  • ½ cup orange juice
  • wine vinegar
  • 2 teaspoons dried basil
  • 1 teaspoon orange peel
  • ½ teaspoon garlic powder
  • ⅛ teaspoon salt and pepper, each
Instructions
  1. Drain the Shirataki Noodles. Rinse under warm water . Rinse well. Place on paper towels to dry. Using kitchen shears, cut the Shirataki into bite size pieces.
  2. Place peas and carrots in a colander.. Rinse and drain and place in a large bowl with Shirataki noodles.
  3. Add pineapple, beans, bell pepper, onions, and orange sections.
  4. Toss to combine.
  5. Combine ½ cup of pineapple juice and remaining ingredients.
  6. Mix well.
  7. Pour over noodle mixture.
  8. Mix gently until well combined.
  9. Chill thoroughly, preferably overnight.
  10. Mix several times while chilling.
