Shirataki Peanut Noodles

Recipe: Shirataki Peanut Noodles

Ingredients

  • 2 -8 ounce packages Shirataki Noodles
  • 1/3 cup chopped green onions
  • 1/3 cup shredded carrots
  • 2 tablespoons peanut butter
  • 1/4 cup miso, vegetable or chicken broth (I used miso)
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1/2 tablespoons brown sugar
  • 1 teaspoon red chili paste
  • 2 cloves garlic, minced
  • 1 teaspoon chopped ginger

Instructions

  1. Open Shirataki Noodles. Drain, rinse and boil for 3 minutes. The liquid stinks, so don’t get it on your hands. Boiling gets rid of the “natural” (icky) smell.
  2. Place drained noodles in a bowl with the onions. Trust me. After boiling them, they won’t stink.
  3. Combine remaining ingredients in a small saucepan; Heat over medium and stir until smooth.
  4. Pour over noodles and onions and toss.

Ingredients

  • 1 pound Shirataki Noodles
  • 1/2 cup Couscous
  • 1/2 cup water or vegetable stock hot
  • 1 red pepper, sweet; cut into strips 1/4 x 1 1/2 inches
  • 1/2 cup peanuts, unsalted; roasted
  • 2 scallions; thinly sliced
  • 1/4 cup parsley, fresh; chopped
Spicy Peanut Dressing
  • 1/4 cup rice vinegar
  • 3 tablespoons olive oil
  • 3 tablespoons peanut butter, smooth
  • 1 garlic clove; finely minced
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Add Shirataki Noodles with couscous to salad ingredients.
  2. Pour on dressing; toss again.
  3. Top with a garnish of orange slices, mandarin orange segments, or pineapple slices and raisins, optional.

Ingredients

Peanut Ginger Dressing
  • 1/4 cup smooth or chunky peanut -butter
  • 1/4 cup hot water
  • 1/3 cup cider vinegar
  • 2 tablespoon soy sauce
  • 1 tablespoon grated fresh ginger root
  • 1 tablespoon minced garlic
Salad
  1. 1 pound Shirataki Noodles
  2. 7 cup chilled cooked shrimp and scallops
  3. 3 medium pickling cucumbers, halved lengthwise, seeded and thinly sliced crosswise
  4. 2 medium red bell peppers, cored, seeded and thinly sliced
  5. 1 cup cilantro leaves, chopped (optional)
  6. 1/2 cup sliced scallions

Instructions

  1. Whisk peanut butter and hot water in a large bowl until smooth.
  2. Whisk in vinegar, soy sauce, sugar, ginger root and garlic.
  3. Add remaining ingredients.
  4. Toss to mix.
