Shirataki Peanut Noodles

Ingredients
  • 2 -8 ounce packages Shirataki Noodles
  • ⅓ cup chopped green onions
  • ⅓ cup shredded carrots
  • 2 tablespoons peanut butter
  • ¼ cup miso, vegetable or chicken broth (I used miso)
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • ½ tablespoons brown sugar
  • 1 teaspoon red chili paste
  • 2 cloves garlic, minced
  • 1 teaspoon chopped ginger
Instructions
  1. Drain and rinse Shirataki Noodles very well. Place on paper towels to dry and set aside.
  2. Place drained noodles in a bowl with the onions. .
  3. Combine remaining ingredients in a small saucepan; Heat over medium and stir until smooth.
  4. Pour over noodles and onions and toss.

Miso is a traditional Japanese seasoning

Shirataki Salad with Spicy Peanut Dressing

Ingredients
  • 1 pound Shirataki Noodles
  • ½ cup Couscous
  • ½ cup water or vegetable stock hot
  • 1 red pepper, sweet; cut into strips ¼ x 1½ inches
  • ½ cup peanuts, unsalted; roasted
  • 2 scallions; thinly sliced
  • ¼ cup parsley, fresh; chopped
  • ¼ cup rice vinegar
  • 3 tablespoons olive oil
  • 3 tablespoons peanut butter, smooth
  • 1 garlic clove; finely minced
  • ¼ teaspoon cayenne pepper
Instructions
  1. Drain the Shirataki Noodles. Rinse under warm water . Rinse well. Place on paper towels to dry.
  2. Add Shirataki Noodles with couscous to salad ingredients.
  3. Pour on dressing; toss again.
  4. Top with a garnish of orange slices, mandarin orange segments, or pineapple slices and raisins, optional.

Ingredients
  • ¼ cup smooth or chunky peanut -butter
  • ¼ cup hot water
  • ⅓ cup cider vinegar
  • 2 tablespoon soy sauce
  • 1 tablespoon grated fresh ginger root
  • 1 tablespoon minced garlic
  • 1 pound Shirataki Noodles
  • 7 cup chilled cooked shrimp and scallops
  • 3 medium pickling cucumbers, halved lengthwise, seeded and thinly sliced crosswise
  • 2 medium red bell peppers, cored, seeded and thinly sliced
  • 1 cup cilantro leaves, chopped (optional)
  • ½ cup sliced scallions
Instructions
  1. Drain and rinse Shirataki Noodles very well. Place on paper towels to dry and set aside.
  2. Whisk peanut butter and hot water in a large bowl until smooth.
  3. Whisk in vinegar, soy sauce, sugar, ginger root and garlic.
  4. Add remaining ingredients.
  5. Toss to mix.
